    Writing has been a lot more difficult recently. I’ve been focusing on living in the moment, living simply, and just enjoying my life. It’s been great, fantastic actually, but it’s time to live more intentionally. It’s time to be more inquisitive about how my mind and heart are doing and what they want and need. It’s time to refocus on forming a path I want to follow for myself. I still probably won’t post often but I’ll try my best to share my adventures & eating intuitively through my wild life ✨
    When your toast matches the scenery 🥑🌵 Grab an avo & tempeh from the store the night before & feast like a true millennial in the morning!
    It’s crazy how fast 3 weeks flies by. One more night & my first solo road trip is over 😭. I wrote a lot & plan on getting more articles up about my DI experience, studying for the RD exam, fueling your outdoor adventures, and eating & living intuitively on the road 🚌 Now a day of exploring SLC before the final push to Wyoming! Also: RIP to my favorite @fabletics leggings who gave their life when I slid down a rocky hill in Utah
    Personally I don’t function well AT ALL without eating fruits and veggies everyday. Luckily my cooler has allowed me to keep lettuce, tomatoes, & squash on hand. It’s impossible to keep your diet 100% the same while your traveling but that doesn’t mean you have to sacrifice intuitive eating and eating what makes you feel good physically and mentally. Plan ahead, accept than some days you may just get stuck eating granola bars, & enjoy the journey 🚌
    This isn’t the prettiest but definitely the most delicious thing I’ve made on the road & without a recipe 🥰 Peanut noodles: -Half a yellow & half a red bell pepper sliced and sautéed with random spices and 1/2 small white onion -Brown rice noodles cooked according to package -A handful of baby carrots sliced Mix 1-2 T crunchy PB with a tsp olive oil and about 1 Tbsp soy sauce and mix into rest of ingredients Quick, easy, and delicious
    Traveling is wiping me out. Being on the road alone is surprisingly a lot less freeing than being with others. I’m solely responsible for everything & it’s a lot to worry about on top of handling an online business. But @chameleoncoldbrew is always there to energize me when times get rough 🥰
